HOLIDAY RECIPE ONE


oh goodness friends ... i never post in the evening {eastern time} but today i had one hell of a time finding this recipe that i promised. but ... i did it! :)

so here is a photo of my batch from last year.
this year the other chef in the family is going to make a double batch.
yipee.

my favorite way to eat it is the next day {after thanksgiving} with leftover rolls & jam.
this is a very easy recipe my friends.

apple-orange cranberry sauce
from Williams-Sonoma Kitchens

1/2 orange
2 cups water
1 tart apple
3 cups fresh cranberries
1 1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp cloves
**play with the last two measurements, i do!

~ squeeze juice from orange & set aside.
~ remove & throw out membrane from orange and cut the rind into a small dice.
~ in a small saucepan over high combine the rind + water and boil for 10 minutes; set aside.
~ peel, core & quarter apple. cut into dice {size of your preference based on how big you want the apples to be in the cranberries} and place in saucepan. add cranberries + orange juice + rind + sugar + spices.
~ bring to boil over high, then reduce to low & cover the pan partially. simmer. stir ocassionaly.
~ you can keep it going until it thickens to your liking {maybe 15-20 minutes} ... it will also thicken just a bit when it sits and cools to room temp.
~ note: can be made the night before ... bring to room temp before serving. i almost prefer it this way.

now i must eat dinner!

Ooo..delicious.

Cranberry sauce is also nice to use as a sauce for salmon. I made some this week and instead of cinnamon and cloves, I sliced up some hunks of ginger. Yum!

i am joining in - and kind of started today but not exactly. posted about an apple pie i made but it was my first attempt at a new recipe... and linked to the cookbook (still in print). see, i am not entirely playing by the rules yet. from now on, family and friend tested with recipes included... great idea!!!
